Seasonal Summer Canapes

There’s nothing we love better than cooking with seasonal ingredients and using produce when it is completely fresh, delicious and at its best. Summer is a great time of year – not just for the sunshine, but also because of the wonderful seasonal ingredients we have here in Britain. We’ve been perfecting our canape menu to include lots of yummy summer flavours, so today we’re going to highlight some of our favourite seasonal summer ingredients and the canapes we have created using them.


Courgette is in season from June to September, so it’s the perfect summer vegetable to use as the base for a delicious vegetarian canape. The delicate yet distinctive flavour of the courgette works really well in our confit courgette canape with feta cheese and mint leaves. These flavours are so fresh and summery, so they’re ideal as a light bite at a canape reception or to serve as a starter at a BBQ or garden party.


Apricots are at their most flavourful between May and September, and they work equally well in sweet or savoury summer canapes. Our favourite way to serve them at summer weddings or parties is by wrapping them in smoked bacon and serving them with an English wholegrain mustard and soy dressing. These summer canapes always go down a treat!


Best enjoyed during late summer, British redcurrants are in season between July and September. They work really well made into jams, jellies or sauces to accompany barbecued meat. To recreate this in a dainty summer canape, we’ve put together a delicious combination of smoked duck with a mini potato rosti and redcurrants. The smoky flavour of the duck contrasts beautifully with the sharp, fruitiness of the redcurrants.


British mackerel comes into season in May and is at its best all the way up until October. Ideal for enjoying in salads, grilled on the BBQ or as a light pâté, mackerel is the perfect fish for summer dining. Our favourite mackerel canape combines mackerel with apple and chervil (which is in season too!) and is finished off with a deliciously peppery horseradish cream. This canape is perfect for a summer wedding.


Spinach is another green vegetable which tastes amazing during the summer. It’s at its best between April and September, so it’s perfect for including in spring and summer canapes. We think the perfect way to serve this is in a light filo parcel with feta cheese and fresh spinach. These are the perfect light bites, and they always go down well with everyone – even the meat eaters love them!
