Delicious Salad Recipes for a Summer Feasting Table

A feasting table is the perfect way to serve up delicious food at a summer party. Whether it's a garden party, anniversary celebration, dinner party or even a wedding, serving up big platters and sharing bowls of seasonal dishes is always a hit. You can't go wrong with some summer salads on the feasting table, so here are a few of our favourite salad recipes and ideas.

Watermelon & Halloumi Salad

Watermelon is a classic summer flavour, and it works perfectly with some grilled halloumi to create a fresh, sweet and salty salad. Start by chopping up a watermelon into cubes, then slice the halloumi and grill for a few minutes until starting to turn golden brown. Combine some olive oil, balsamic vinegar and honey to make a dressing, then mix together with rocket, cucumber and chopped mint leaves. Add the watermelon and halloumi, then serve.

Sweet Potato, Feta & Puy Lentil Salad

We can't get enough of sweet potatoes! They're a really versatile ingredient that's delicious in a salad - both hot or cold. Try roasting some sweet potato chunks with fennel and sea salt. Meanwhile, prepare some puy lentils and toss with an olive oil and lemon dressing. Mix the roasted sweet potato and puy lentils with some torn feta cheese and add to a bed of rocket leaves.

Grilled Peach Caprese Salad

Caprese salad is one of our favourites - sometimes you can't beat the classics! To give it a modern twist, add some grilled peaches for a sweet and savoury salad. Start by slicing some peaches and cook them for a couple of minutes on a griddle pan, until the start caramelising. Then slice some heirloom tomatoes and fresh mozzarella. Layer the peaches, tomatoes and mozzarella together with basil leaves, then top with a balsamic, olive oil and sea salt vinaigrette. Keep it veggie, or add some parma ham.

Orange, Pistachio & Pomegranate Couscous

Couscous is always a great option for summer feasting tables. We love using Middle Eastern flavours to create a delicious couscous salad. To make, prepare some couscous and set aside. Chop some oranges into small pieces, and mix with some chopped pistachios, pomegranate seeds, chopped mint and spring onions. Add to the couscous, along with a dressing of lemon and orange juice and some salt and pepper.

Spinach and Edamame Bean Salad

Salads don't always have to include lettuce leaves. Try this Asian-inspired salad for something fresh and spicy on the feasting table this summer. Begin by blanching some spinach and shelled edamame beans. Make a dressing by combining ginger, soy sauce, vinegar, sesame oil and honey. Toss the spinach and edamame beans in the dressing, then top with some sliced fresh red chillies and a sprinkle of sesame seeds.
